THE WEEKEND COCKTAIL: Holiday Sangria

How quickly the holidays are sneaking up on us. This is a drink to make whenever you have a large gathering. Starring the look and taste of the holiday season it is a delicious way to entertain. I am a Crystal kind of girl when sipping Champagne, but for this a nice inexpensive Cava (Spain) or Processo (Italy) will do just fine. Too much holiday cheer? Simply omit the liquor and use both sparkling apple and sparkling lemon juice.

Tree Trimming Sangria

1-cup whole fresh cranberries

2 oranges, quartered with peels on, then each quarter cut into 3 chunks.

3 Lemons, sliced thinly with peels still on them

8 ounces Grand Marnier

3 apples, cored, cut into 1/2-inch chunks

1 bottle Champagne, Proscesso or Cava

1 bottle of chilled sparkling apple cider or sparkling lemonade

Fresh mint

In the bowl of a food processor fitted with a steel blade chop the cranberries. Place the chopped cranberries and the orange chunks into a 3-quart or larger pitcher. Add the orange liqueur and muddle the fruit in the liqueur with a cocktail muddler or a wooden spoon to release the juices. Add the apples and mix to blend with other fruit. Cover and refrigerate the fruit for at least 2 hours, and up to 24 hours. Pour in the Champagne and sparkling juice. Stir and garnish with mint and a few whole cranberries. Pour into tall glasses filled with ice.
