Attention 818 foodies: Jump "over the hill" to Test Kitchen LA

Cooking and chefs are now on the forefront of our culture — with all the cooking shows, culinary masters have hit celebrity status. So, it just makes sense that chefs should now have the ability to showcase and test out their creations.

Enter Test Kitchen LA. It’s “over-the-hill,” but since it’s one-of-a-kind, if you’re a Valley foodie, this is a “must-know, must- go.”

Opening tomorrow on Pico Avenue in the space that once housed Orlando Orsini, and most recently Sparks Woodfire Grill, this is a “pop up” dining experience on a whole different level.

The concept, from Bill Chait,  the seasoned L.A. restaurateur who is currently a managing partner at Spark and Rivera, and Brian Saltsburg, a partner behind Boyz Night Out ( the underground traveling restaurant event), is a showcase for chefs by restaurateurs that allows for experimentation and testing of new ideas and concepts.

Visiting chefs will be serving dishes they are working on for future restaurant projects. Mixologists will provide innovative cocktail pairings. Each chef will be working alone or in consultation with chef Ricardo Zarate (Mo-Chica), who is currently finalizing his own restaurant.

Leading off from August 18-24  is chef Jordan Kahn, who started cooking at Thomas Keller’s French Laundry at age 17. He will be testing creations for the highly anticipated opening of Red Medicine, the new upcoming restaurant brainchild from Umami Burger’s Adam Fleischman. The meal will be a $40 prix fixe affair with 12 Vietnamese inspired dishes, such as Saigon Tartine with pork belly, pate, coriander, carrot pickle and green chili; and Bay Scallops prepared with pomelo, young ginger, tamarind syrup, puffed tapioca and charred friseé.  Wine pairings and drinks will be created by  Noah Ellis and Matthew Doer.  There are no names for their cocktails, but check out the ingredients for just two drinks:  Bulleit, Lime, Rhubarb Grenadine, Ginger Beer  or Batavia Arrack, Lime, Tamarind, Demerera, Condensed Milk Foam.  Cocktails are $8-12 each and not included in the prix fixe.

Following Kahn, Zarate will helm the kitchen for one night on August 24.  His menu and the list of chefs is forthcoming on the website.  The future chef line up will include Rivera’s Jon Sedlar testing for R26, inspired by 26 nations and regions in South America, Central America, Spain, Mexico and the Hispanic Carribean.

Be warned there is a waiting list and the dining experience is all about the food and drink. Seating is both communal tables and individual tables.  There are no food substitutions. It’s truly a “test kitchen,” so be willing to eat what is put in front of you — no exceptions.
