Just a hop over the hill is a wonderful little Los Angeles treasure! EVO Kitchen is local, organic family owned restaurant supporting local farmers, craft breweries and sustainable wineries. With meat lover, vegetarian, vegan and gluten free options, EVO Kitchen is a great spot where everyone can feast together! I have been there several times and everything is wonderful even the very decadent desserts.
What impressed me the most was the long list of local craft beers on tap and by the bottle (including gluten free), the eclectic wine list and the inspired cocktails. Like many small family owned eateries they only have a beer and wine license.
The EVO Kitchen team of mixologists wanted to have some fancy cocktails so they cleverly created an array of tempting, beautiful beverages using Soju. A Korean brew made from barley, sweet potato and tapioca with sweeter, vodka like taste. Jinro Soju is filtered through bamboo charcoal to remove all impurities. EVO PINEAPPLE MARTINI
1-cup fresh pineapple
1 cup Soju or vodka
½ cup simple syrup
Blend in a high-speed blender for about 1 minute and let it settle, scoop out the foam and pour into a shaker with ice and shake vigorously. Then pour into two martini glasses rimmed with organic sugar and garnish with a pineapple wheel.
1 cup granulated sugar
In a small saucepan heat the sugar and water and bring to a boil. When the sugar is completely dissolved remove from heat and cool to room temperature. Refrigerate, covered, for up to 1 week.
