Finally. A sure sign has appeared that indeed there is a place for true gourmet cuisine and restaurant innovation in the San Fernando Valley. To all the naysayers, hold your tongues and ready your palate, LudoBites is coming to town.

Chef Ludovic Lefebvre, former award-winning executive chef of L’Orangerie and Bastide, and Top Chef and Iron Chef star — the roving chef who has taken the Los Angeles restaurant scene by storm with LudoBites, his guerilla style pop up restaurant event,  is opening up his sixth pop up in Sherman Oaks at the former Max/Marche location with LudoBites 6.0 — October 20 to November 11, and November 30 to December 5. Reservations will be taken online October 12 at 5 pm.

Chef Ludovic Lefebvre — foodies follow his LudoBites pop-ups with the fervor of foraging for food crack.

For those who might not recall, LudoBites is so wildly popular that the reservation system crashed this past summer because so many people were trying to get to LudoBites 5.0 at Grams and Papa’s Sandwich Shop downtown. His food truck line is known to be blocks long as followers have pursued LudoBites fried chicken with the fervor of foraging for food crack. No kidding. I’m a witness.

Lefebvre, who has never owned a brick and mortar restaurant, has been called a “mad genius” who reinvents himself through imaginative new menus at each pop up site.  At LudoBites 6.0,  which Lefebvre will run with his wife, Krissy (they’re Sherman Oaks residents!) , he’ll fuse French and Asian cuisine with his own creations, such as foie-gras panna cotta with turnips, radish and miso gelée; crisp snails with garlic, parsley, papaya and green-mango relish; a savory kimchi cheesecake; seared Wagyu with Japanese whiskey and pickle vegetables; and a dessert course of pancake soufflé, with maple syrup ice cream and salted-butter Chantilly cream. The menu will change nightly according to the season and Lefebvre’s whim.

And what about Andres Guerrero’s Max Restaurant?  He still owns the space and word has it that he’ll be back in 2011.  In the meantime, set your fingers on speed type for online reservations only on October 12. No phone.  LudoBites 6.0 is one reservation that’s going to be tough to get. Stay tuned.

Oct. 20 until Nov. 11, and from Nov. 30 until Dec. 5.  Two reserved seatings at 6  and 8 pm, as well as a ten seat communal table for walk-ins.  Reservations  will be accepted at www.ludobites.com through an Open Table program beginning on Oct. 12 at 5 p.m., Pacific time. Very creative. I’ve never tried before. Will have to do so to see what all the excitement is about. I like the “food crack” comment. I can relate.

Exciting news – can I use your name to get my reservation?
