Back to the Kitchen: The Anniversary Mojito

A few years ago the beautiful and well read Sun Community Newspapers closed its doors and made way for a new way of receiving community information. My friend and editor at Sun (where “Back To The Kitchen” weekly food column was born), Karen Young, went on to create That was two years ago —  500 “dailyfinds”- over 1000 recipes and over 100 weekend cocktails ago!

Karen’s commitment to local business, community and editorial content is tireless and she spends many hours compiling all of this wonderful local information as well as nurturing writers. She shares her gifts and talents with all of us so graciously and it is felt in the valley and beyond!

This cocktail is festive, fun, and traditional with a twist! The perfect elements for a celebration! Happy Anniversary Karen, we appreciate all of your hard work. And thank you readers who keep my columns fresh and alive! You all keep me excited about writing and sharing recipes! Cheers!

My Daily Find Two Year Anniversary Mojito

2 kiwi, peeled

1 ounce fresh Meyer lemon juice

1 ounce fresh lime juice

1 ounce agave nectar

12 fresh mint leaves

12 fresh cilantro leaves

3 ounces premium rum

Club soda to fill glass

Lime wheel, for garnish

Mint sprig and cilantro leave, for garnish

In a cocktail shaker, muddle kiwi, limejuice, Meyer lemon juice, agave nectar, mint and cilantro. Add rum and cubed ice; shake vigorously. Pour over fresh ice into two tall glasses and top with soda. Garnish with lime wheel and mint sprig and cilantro wheel!
