The Weekend Cocktail: The Summer Melts Into The Fall Punch

Earlier in the week I gave you some fantastic recipes to celebrate the last weekend of the summer. Here is a cocktail to make your Labor Day gathering complete. Have a safe and awesome weekend!

The Summer Melts Into The Fall Punch 

2 cups vodka

2 cups pomegranate juice

1 cup club soda

Juice of one large lemon

1/2 cup ginger simple syrup

3 cups Prosecco

In a large, punch bowl, stir together vodka, pomegranate juice, club soda, lemon juice and simple syrup. Top with prosecco. For a pretty presentation float lemon wheels, star anise and some edible flowers. Serve in tumblers filled with ice. Serves 8.

Ginger Simple Syrup

1 lemon

2 cups coarsely chopped fresh ginger with peel, about 8 ounces

1-cup sugar

2 cups water

Remove the outer peel of the lemon with a vegetable peeler being careful not to include too much of the bitter white pith. Finley chop the lemon peel and ginger in a food processor. Transfer the ginger-lemon mixture to a medium saucepan, add the sugar and water and bring to a boil. Reduce heat and simmer partially covered, for 15 minutes. Strain the mixture and cool. Cover and refrigerate for up to 2 months. Makes 2 cups.
