Happy National Pie Day…or shall I say “week” and isn’t it worth celebrating? Yes, January 23 was National Pie Day. As many of you know I am one of the founders of Magpie Gourmet Mini Pies. (Stay tuned for some exciting news in regards to Magpie!) I have brought cocktails to pie before —Kier Royal Champagne Pie, Mojito Pie, Pina Colada Pie, Figtini Pie and our signature Strawberry Margarita created for Cinco de Pieo! I thought it was only fitting to celebrate by bringing pies to cocktails!
Hot Apple Pie Cocktail can be the new Irish coffee. So tasty it is dessert with a kick in a glass. In my opnion no great apple pie is complete with out a scoop of really great vanilla ice cream. This cocktail has it all for a cozy winter night in front of the fireplace.
Tuaca Italian Liquor with a hint of citrus and vanilla can be purchased online at http://1000corks.com/wine/Tuaca If you can’t find it you can replace it with brandy or a vanilla infused vodka.

Hot Apple Pie
4 ounces Tuaca
10 oz-Hot Apple Cider
2 scoops of vanilla ice cream (or whipped cream)
2 cinnamon sticks
Pour Tuaca evenly into two Irish Coffee glasses. Fill with cider. Scoop ice-cream (or whipped cream) on top of each and garnish with cinnamon stick. Makes two cocktails.
